Help finding watches made on these days

Hi again!

I was wondering if there are reputable watchmakers who kept enough records to tell exactly what day of Watch was made on as far back as 1890 without having to pay thousands of dollars?

I thought it would be really cool to try to find pocket watches that were exactly 100 years older then my son and I, but I'm not really sure how to go about doing that. Also, as I'm just getting into this I would prefer to try and find them in the sub $300 range (I know that means low quality, but I'm only just starting to carry a pocket watch and I don't want to sync a bunch of money into it until I know that it's something that I'll stick with more than just a fad. I'm really loving it at the moment, but I want to give it some time before it becomes a huge investment.)

For me 100 years would mean February 23rd 1890 and for him it would mean February 22nd 1917.

Does anyone have a good idea of how I would go about finding that sort of information?

right now I think I would prefer a hunting case style and if possible the same or very similar models just from two different manufacture dates.

I doubt the records you want exist. I know Hamilton had records for when a movement went to the finishing department, but that doesn't necessarily mean when the watch was completed.
